I bought several of these freezer cookbooks. This one is my favorite. I am not going to spend a whole day cooking for a month. I wanted a book that showed me how to cook a meal for tonight and make extra to freeze for later. This one has directions for both finishing part right then, and for freezing for later. It works out great.
I also think this has the best recipies. Everything I have tried has been great. The recipe for South of the Border Lasagna is worth the price of the book. My husband grabbed the frozen one just the next week to have for dinner.
These are not "light" recipies; they are tasty!

Public Produce: The New Urban Agriculture may be ahead of its time. It poses an interesting question to city and town planners - and we, the residents: should local food production rank right up there with planning for local housing, roads and education?
Darrin Nordahl who has taught at the University of California Extension in Berkeley and now works for the Community and Economic Development Department in Davenport, Iowa, considers municipally sponsored agricultural projects a natural extension of the "post organic/buy local" movement. He presents some stunning projects to prove his point. Local governments can become a change agent in the area of local food production.
Mayor Richard Daley of Chicago, who reasons that "importing some food is different from importing most of it," houses a 200,000-member apiary on the green roof of City Hall. Sale of its honey supports local cultural events. Kaiser Permanente, the largest health organization in the country, opens Farmers Markets in thirty of its facilities from Georgia to Hawaii. The first, in Oakland, California, was started because a Kaiser doctor is convinced that "nothing is more important to people's health that what they eat everyday."

In Detroit, Michigan, 30 percent of the city's land is vacant. Community groups have converted these underused locations into local opportunities to produce food. Detroit's urban farming recently sparked stories in the New York Times. Seattle adopted a city-wide goal: create a dedicated garden site for each 2,500 households. Providence, Rhode Island intends to double the amount of food grown in and around the city in the next ten years. Des Moines, Iowa, has already moved beyond public food gardens to establish public orchards, grape arbors and a nuttery.
The author argues that "the sheer abundance of land within public control necessitates a hard look at how it can best serve the needs of the shareholders" and points to an "increasing number of public officials across the country who believe growing food is not only an acceptable land use, but necessary for the health and well-being of the community.
The future will hopefully be, as Nordahl suggests, a time when growing food constitutes "the highest and best use for land." The publication of this book certainly forwards that view of the future.

Recently, I decided to order 3 Candida Albicans books from Amazon to know what could still be "wrong" with my anti-candida diet. Feast Without Yeast appeared to me at first to be uninteresting. It takes its root in curing Autism, which is not what I was looking for. Moreover the book itself is less attractive, being less stylized and professionnally typesetted than the others. Many recipes call for potatoes or meat, all things that I had left behind me long ago. And isn't potatoe a carbohydrate of the sort that should be banished from an anti-candida diet?? Well these were my first thoughts. So I began with the other books... After a month or so practicing the others' diet, nothing had changed and the sky was still very stormy to me. So I finally came back to read this Feast Without Yeast book lurking on my shelf. Wow! In just a night I changed my mind completely. This guy (Dr. Bruce Semon) was presenting a UNIFIED, RIGOROUS and NON-CONTRADICTORY explanation of why Candida is making us so bad. And this understanding makes it possible to know which of our habits may trigger this beast. Moreover, it explains why this damned piece of food, being it coffee or chocolate, beloved and desired more than anything else on earth, even gold, is in fact killing us. Because you need pretty convincing arguments to throw them out of your life. It presents a 4 stages diet, which means that you start progressively to eliminate more and more food, until you feel ok. That is a very amenable and realistic diet plan, because no one on this planet can stop eating all those lovely food at once. And in general, being presented a very restrictive diet, you don't know where to start at first. Well this book tells it all. ALL. As a final remark, let me say that the book, even if not pretty, is in fact very usable. The recipes are well categorized and the index at the end of the book is VERY comprehensive. This makes it easy to find a recipe targeted to some particular ingredient. Also, the recipes are well explained and taste relatively good given the tremendous restrictions imposed. Most of them are in fact vegetarian. And most importantly, it works! But be warned: it is not an easy diet. It is a life-changing diet, and changing one's life is never an easy endeavor. But that also is explained by Dr. Semon. 5 stars.

I'm a Chef, and have borrowed copies of Escoffier's Le Guide Culinaire from friends whenever I need it. On a lark, I ran a search on Escoffier here at Amazon.com. I was stunned to find this book for the low cost of $12 or so, knowing that every other copy I had seen cost $60 or $70. So I ordered it and paged through it. Well, it only prints 2300 or so of over 5000 recipes in Escoffier's treatise. Admittedly, probably more than the home cook actually *needs*, but nowhere does the book say that it has been abridged.
But, like many Amazon.com customers, I found myself in the position of thinking "but it'll cost me half the price of the book to send it back." So I wound up giving it to a friend who likes to cook, but doesn't need the "real thing."
Suffice it to say that if you want the real Esoffier, you're still going to have to drop the $60+ for the Van Nostrand Reinhold edition. Sorry, culinary students, you didn't luck up on a deal.

As a big fan of the first book in this series, I was glad to see another one pop up and quickly put it on my wish list. I was also glad to see that it was even longer than volume 1, with an extra 110 pages. The style is great -- well paced, well laid out, with the 'harder' science very skimmable and yet approachable to non-chemists. I particularly like the way he challenges conventionally held assumptions by, in many cases, doing simple experiments that seem to answer things conclusively. The inlined recipes (by his wife, Marlene Parrish) look delicious and provide a nice break to the flow of questions. Some of my favorite answers:
Why does iced tea turn cloudy? Will coffee stay hotter if I put the cream in right away or only when I'm ready to drink it? Why are there sulfites in wine? How can I get a red wine stain out of a tablecloth? Why do onions really make me cry? Why are "sweet" onions sweet? When an banana ripes and gets sweeter, does it contain more calories? What is a free radical? What makes mashed potatoes gluey? How can I best match a pasta shape with a sauce? Does marinating work? (suprising!) What's the difference between browning and caramelizing? Why do we cook with wine?
And so on. If you like cooking and like knowing more about what's going on inside the pan and aren't afraid of a few polysyllabic words (mmmm, alpha-galactosidase... don't worry, they are defined in context) then grab this book. I couldn't put it down!

This book is a personal re-examination of food--what we eat, and why we eat it. In this book, Prentice examines food customs and traditions, searching for their physiological and environmental rationale. Her primary observation about food traditions is that they are strictly tied to the seasons, and thus the continual year-round availability of our foodstuffs has resulted in loss of much traditional knowledge about what is good for us and what isn't. In recognition of the essential seasonality of foods, Prentice organizes this book into the thirteen moons that make up the year, from the famine moon, to the sap moon, from the egg moon to the corn moon, from the blood moon to the wolf moon.
Each chapter describes the ecology that led to the association between a particular food item and a specific time of the year. In the chapters, Prentice discusses the nutritional contributions of the featured food items, and how her relationship with that food has changed over the years. For example, she explains how she used to avoid milk and other dairy products, but now relishes them as a gift of love from Mother Earth. Each chapter also includes recipes of the season, ranging from exotic dishes of non-Western food cultures, like Cardamom and Jaggery pudding, to simple directions for lost arts, such as rendering pork, or making homemade yogurt and sauerkraut.
Prentice was once a strict vegan, who for health reasons, eventually found herself drawn to a diet which includes animal products, but not the products of industrial agriculture. There is much that vegetarians and vegans would not like in Prentice's essays, since she explains how her 10 years of vegetarianism were not healthy for her. Having had the same experience myself after being a vegetarian for 20 years, I can appreciate the wisdom in what she writes. While vegetarian diets work well for some, they are not appropriate for everybody. But at the same time, diets that include the consumption of industrially produced and processed animal products do nobody any good. We need to be willing to recognize our relation and responsibilities to the animals that we consume.
I first heard of this book when I attended a Vermont Localvore potluck at which Prentice was the invited guest chef. I was deeply offended then at her attitude, when she announced she was going to make a salad using a recipe from her book, but lamented the lack of local artichokes or olive oil. `How could such a person be associated with local cooking,' I wondered, `if she doesn't even have the sense to find out what the best local ingredients are and celebrate them, instead of parading the products of another region in front of us?' I figured that a seasonal local cookbook written by a national author would be a worthless concept. Fortunately, that's not what this book attempts--instead the book is much more about rediscovering our connection to food than about specific local recipes.
Although she has become famous for leading the concept of eating foods only from one's local region, what she urges here is really an appreciation for the products of small farms. Thus, instead of simply cheering on local food, Prentice argues in this book that our industrial agriculture system has torn us away from one of the most essential of human traits, our relationship to the food that nourishes us. Instead of following diets of avoidance, Prentice advocates recognizing the meaning that each item of food brings to our lives, and using food to re-establish our connection to the land. Indeed, the only foods that Prentice avoids are those heavily processed products of industrial agriculture: refined sugar, white flour, and pre-packaged extruded junk. Although the book contains a few recipes, it is not a cookbook, but rather a wake-up call: "Our poor diet is at least partly a physical manifestation of a spiritual decay," together with some suggestions of how we can begin the journey back to healthy eating.

If you've ever wondered why cancer has somehow taken hold in your life or in that of someone close to you, you will find some surprising common sense theories here with some common sense strategies on how to get healthy again. A friend gave me this book early on in my uphill cancer fight and I finally felt "armed" and ready to wage war, instead of helpless and at the mercy of allopathic medicine's limited range of therapies (and few natural ones.) It's not a criticism of modern oncology techniques-this book lists ways to AUGMENT them with some simple common sense, supplementation of various kinds (detailed nutrition & vitamin regimens, spirituality, family support, etc..) and a belief in positive outlook/outcome. The most educational aspect of this book was that it taught me so much about our horrid American/Western diet and how much is has likely contributed to all kinds of diseases...including cancer. When 1 in 3 of us will experience cancer during our lifetimes, it can't hurt to consider the points that Mrs. Frähm highlights that not only speak to the ways our natural immune system becomes vulnerable, but how to strengthen this unrivaled form of chemotherapy.This book should appeal, in particular, to the active/critical patient or family who wants to explore the realm of natural cancer fighters that-unlike traditional oncology-work to get the body back in balance vs. kill the cancer at ALL COSTS. Mrs. Frähm not only takes you through her personal battles and how she arrived at her system, but explains in simple terms how these things work. I'm grateful beyond belief that a thoughtful friend passed along a copy of this powerful book and it's the first one I name when asked what book I'd recommend for a newly-diagnosed cancer patient. It's a hard-core, disciplined outline for those who believe in making some serious lifestyle changes in order to better their odds of keeping cancer from taking hold or ever coming back. At the same time, it doesn't claim to be the cancer gospel-anyone who claims to have THE cancer answer or THE cure is either disillusioned or a flat-out liar...thankfully, Mrs. Frähm doesn't attempt to do that.I appreciated her candor and personal courage during her difficult cancer fight and the specific things she shared in her personal nutritional regimen that I, too, incorporated that made me a much stronger cancer patient. I'm not only a smarter soldier in my own cancer war but I feel like I have a hold on the arsenal of natural weapons that my cancer enemy doesn't like. I have Mrs. Frähm-and the friend who gave me this powerful book-to thank for that.Just know this book isn't for everyone-especially those who are wary of anything their doctor doesn't rubber stamp with approval. But some of us didn't have the luxury of such enlightened, infallible oncologists and Mrs. Frähm just shows the reader some natural, alternative ways to bolster our immune systems & fight cancer without destroying ourselves in the process. And if your cancer situation is beginning to look a little bleak, this may well point you in some directions that no one else will tell you about. It's a shame that her 'Battle Plan' is only well-known within the cancer survivor community when it contains so many sound principles. If you're in the 'battle' against the Big C, it's difficult to NOT become a smarter soldier with this book. I only wish I had known about some of these principles years ago as I might not have even been diagnosed with cancer to begin with.p.s. As far as how Mrs. Frähm is doing today? I don't personally know...but given the fact that she only had 2 months to live- many years ago, mind you- after her "last" medical option expired and failed, whatever time she cultivated beyond that is due to the gifts of a higher power and a determined woman who took some brave steps to meet her enemy head-on.

This is a WONDERFUL book! On a scale of 1 to 5, I give it at least a 10!
Bill REALLY gets down into the emotional issues of dieting and provides practical take-away tools to really help you, if you are willing to do the work. I consider myself a "professional" dieter because I have spent 90 % of my entire life dealing with weight issues. I have had to fight extremely hard to lose weight as well as to keep from gaining weight. Many years ago, I gave up, until something inside me woke up. I lost 60 pounds and because of my experiences before, during, and following the loss, I can personally attest to many of the things Bill writes about as "right on the mark"!
I usually know in the first 20 pages or less if I am going to like a book. Bill hooked me BIG TIME on page 11. As he speaks to his own past experiences, he tells us, "For most of my adult life, I INTENTIONALLY gained two or three pounds every year until I was almost 250 pounds. I say I was intentionally overweight because I have never ACCIDENTALLY eaten anything.. . "
(OUCH! I have made every excuse known to mankind to myself over the years, but this hits home! Has anyone out there EVER eaten anything without the total awareness of EXACTLY what they were doing? The internal dialog is more like, "Yeah, I know this xxxx has about 700 calories in it, but the heck with it. I had a rough day and I deserve it. Besides, I will cut back tomorrow." Then tomorrow is another excuse, or maybe you do this only once a week, and every 5 weeks, you just gained another pound.
Bill writes this book around the cognitive/thinking processes that our minds go through and how we can channel that process to help our weight loss efforts rather than hinder them. He provides a process with tools, so that each step of the way, you stop and assess your thinking and re-shape it to your advantage. This is like a lesson workbook. As you journey through the lesson, you stop and work an exercise. The exercises build in a helpful way to help you achieve. This is not a novel that you sit down and read through one night when you cannot sleep. On the contrary, I suggest that you work through the book slowly and get into the exercises--take time for them.
The exercises are adult learning tools. If you do not want to write in your book, or need more space, Bill provides a website where you can download the forms. You can print them out and review them as you work through the book. This book is designed to effectuate permanent and positive life style changes to help you lose the weight, keep it off, and adapt a healthier life style. Most diet books fall short on changing behavior patterns and many people fail as a result. This book also uses the power of visualization, positive thinking and the Law of Attraction--a winning combination!
An example form would be the form/tool on page 25. "My Blueprint for Success" is where you visualize how the future YOU will look--what you look like--what size you wear--how you feel--some affirmations. Then you describe your new behavior--what you do--how you feel--what you eat. Writing these things down, and referring back to them, will help you to visualize the new you, and to focus on that image until you achieve it. This is only one exercise. The book is loaded with them.
If you have a normal metabolism, your journey will be that much easier. But even if your metabolism is slow like mine, I believe this book has the potential to benefit you immensely--if you are willing to work through the exercises and try for about 30 days--long enough to break your bad habits and set new behavioral patterns. I would say this book is a MUST for your personal library, if you need weight control help. I keep going back to the bottom line--"I never ate anything accidentally"! That, kinda, says it all. If I ate it, I knew EXACTLY what I was doing and chose to do it, regardless of any BS excuse I might come up with.
A side note from your friendly Amazon reviewer--losing and maintaining your preferred weight will likely take time and be a lifelong process. You must 1) love yourself, 2) be patient with yourself, 3) really want to do this, and 4) keep going, even if you mess up. There are no magic bullets. There is no magic pill. Even operations don't seem to do what people expect. (I have known several people who got them.) For most people, weight loss is a slow process and you must be prepared for that. I only lost 5 lbs a month. But before I knew it, a year had passed and 60 lbs went with it. NEVER GIVE UP!

I had the pleasure of working for Susan Spicer many years ago, so I might not be the best judge of `crescent city cooking'. However, and on the other hand, I know that she is a one hundred percent perfectionist. Spicer will not let one plate out of her kitchen that does not pass her absolute hard-core standards. And I think that `Crescent City Cooking' is one of those cook-books that anyone who has spent even a little time in the kitchen will appreciate due to both its simplicity and shrewd advice.
One thing that I would like to point out is that these recipes are in my opinion guidelines. Maybe you try a dish one time exactly the way it is spelled out here, but then half the fun is in playing slightly with the ingredients the next time. What is talked about here is how to get the most out of a dish... how to go about it the right way.
In my mind, Spicer is a culinary god. I always compare every single restaurant to Bayona. Some have come close, but ultimately none match the quality over-all of dining experience. This book is sort of a compilation of natural remedies taken from other similar books, with their permission of course, such as Secrets of The Chineese Herbalists, Miracle Medicine Foods, Miracle Medicine Herbs and a number of others, including some by John Heinerman. So you're getting a lot of great information from many books with out having to buy them all. Included are references to scientific studies when appropriate, written in an easy to understand style, when remedies are discussed along with many personal testimonials, which I always enjoy reading. Many if not all of the foods and herbs discussed are indeed mentioned in the Bible with numerous scriptures given where they are. There is an excellent index in the back which can be used to look up a condition and see what foods, herbs etc. can be beneficial for it or you can look up a food or herb and see a list of conditions they can be used for. This is very handy. A whole host of conditions are covered from arthrits, cancer, high blood pressure/cholestrol, ulcers, infections and many more too numerous to mention. If you are in to natural remedies this book belongs in your library.

I've long been a fan of Leslie Cerier's easy, earthy style of cooking, full of hearty grains, gentle seasonings, and organic produce. Though I'm not gluten-free, I added this book to my collection for all the above reasons.
The previous review is so unfair-- to give a book a one-star review because it has no photos? It would have been nice, for sure, but some publishers don't have the budget. And because there is a recipe for cooking short-grain brown rice? These instructions preceded a whole chapter on making healthier sushi, hence its inclusion. Also such instructions are good for people who buy grains in bulk and who are just getting familiar with healthier grains.
I've already made several recipes from this book and they are outstanding. Corn Grits with Sautéed Onion, Kale, and Cheddar (I used vegan cheese), Soba with Tempeh and Broccoli in Coconut Sauce, and Cilantro Pesto were all great. There are probably more dishes here for cool-weather cooking, so I'm looking forward to trying things like Spiced Yams with Pecans and Garlicky Baked Beans with Parsnips and Butternut Squash in the fall.
Aside from being good for gluten-free cooking, this book is a great introduction for using a wide array of whole grains we don't usually think of, like millet--it's such a tasty, healthy grain, and I rarely think to use it. Thanks, Leslie, for another great collection of recipes and tips! If you like this you'll also like Going Wild in the Kitchen, one of my favorite veg cookbooks.

I'm a good cook and baker, but every time I have to bring something to a get-together, I end up obsessing over what to bring. I fall back on the same old things so much that I get bored, even though people seem to enjoy what I bring. Recently, I have been asked to bring food for various organizations/activities--probably at least once a month. This book, which is under $20.00, is well worth the price. It has more than 200 recipes, and there is a very good variety of recipes, including vegetarian ones or ones that could be easily made vegetarian/vegan. That's important to me because I have a vegetarian daughter. It is great that the author provides information on how to increase the amount of servings if practical, and provides a time-line of how long to expect to take to make the dish. Her notes on "how to tote" the dishes are helpful, since getting the dish there intact is important. There are some recipes at the end of the book for gift-giving and they will be wonderful for Christmas gifts. I like that the author did all my trial-and-error work for me--testing what goes over well at a pot-luck, is fairly simply to make, and travels well. I want to buy more of her books after purchasing this one, because her recipes are "real life, without too many exotic ingredients, and food that people would actually eat.

This book is a Godsend to anyone who wants to eat good food that is healthy and tastes good. I had the priviledge of having Dave Grotto as a nutritionist during chemotherapy and radiation for breast cancer. He came to my home and went through all my cabinets to show me all the items that were 'bad' or 'good', then tagged them with stickers, so I wouldnt forget. Then he took me grocery shopping to show me all the great foods that are great tasting and also very healthy. So many foods we dont realize are right in front of us that we dont try!! He taught me how to read labels, not just by fat and carbs, but the ingredient contents, and explained how to make them. It was fun and educational. I am happy to say that one year after my last treatment, my last check up was wonderful, no signs of cancer!!!! Coinsedence or fact, that foods play a big part in your health? Probably both, but I am not giving up on all the advice that Dave gave me. Im feeling wonderful. Everything he told me in person, is also in his book. I take it shopping me all the time, and refer to it quite often. Buy the book!!! You WILL NOT regret it!!
